Creamy Asparagus Soup

Asparagus is a wonder vegetable, blessed with loads of nutrients. Rich in folic acid, it is very healthy for the foetal growth and also for lactating mothers. Also it contains calcium, vitamin C, E, K and B6 and natural insulin. All of these nutrients are essential for a healthy pregnancy. So make sure to have Asparagus in some form or the other during and after pregnancy. Here’s a simple yet yummy creamy Asparagus soup recipe…

Ingredients used
500 gms of green asparagus
50 gms butter
1 large onion roughly chopped
1 tablespoon cornflakes
1/2 cup heavy cream
½ cup Chopped coriander

Cooking Method
Chop off the hard, woody part of the asparagus spears.
Snap off the tips from the spears and keep them aside for garnishing.
Chop the stalks and all left over asparagus into half inch pieces.
Sauté onion in the butter in a soup pot over fairly low heat. Next add asparagus chunks and the seasoning, stir fry for 3 minutes. Next add 50 ml of water into the soup pot. And boil the contents until the asparagus becomes tender.
While the soup bubbles, add the cornflakes and keep stirring so that it does not stick to the bottom of the pan. Turn of the heat after 3-4 minutes. Allow the mixture to cool.
Blitz the preparation in a blender and add boiled water to get the right consistency.
Add cream to the soup and garnish with asparagus tips and chopped coriander
